ANKOM FAA is a starch-hydrolyzing alpha-amylase enzyme
with high heat and pH stability derived from a genetically modified strain of Bacillus licheniformis. FAA is an endo-amylase, which is an enzyme
that randomly hydrolyzes a-1,4
glycosidic bonds to reduce the viscosity of gelatinized starch, producing
soluble dextrins and oligosaccharides.
